Cake with Coconut Flour and Plums

The cake with coconut flour and plums is an exotic dessert full of interesting flavors. Here’s an Italian recipe to prepare this delicious cake.

Ingredients

  • 150 g of coconut flour
  • 100 g of all-purpose flour
  • 150 g of sugar
  • 100 g of soft butter
  • 3 eggs
  • 1 packet of baking powder
  • 1 pinch of salt
  • 200 g of plums (fresh or dried, if they are dried, it is better if soaked in warm water or rum)
  • Grated zest of one lemon (untreated)

If the plums are fresh, I recommend pitting and cutting them into pieces. If you’re using dried plums, after soaking them, pat them dry and cut them into pieces as well.

Preparation

  1. Preheat the oven to 180 °C.
  2. In the bowl of a stand mixer or using an electric mixer, cream the soft butter with the sugar until you get a frothy mixture.
  3. Add the eggs, one at a time, continuing to beat.
  4. Gently fold in the sifted flour with the baking powder and a pinch of salt, mixing gently to obtain a smooth batter.
  5. Add the coconut flour and grated lemon zest, stirring gently.
  6. Fold in the plums into the mixture, distributing them evenly.
  7. Pour the batter into a buttered and floured cake tin, or lined with parchment paper.
  8. Bake for about 40 minutes or until a toothpick inserted into the center of the cake comes out clean.
  9. Allow the cake to cool before unmolding it.

Curiosity

This cake pairs the sweetness of coconut with the tanginess of plums to produce a very pleasant taste contrast. In Italy, these flavors are greatly appreciated as they recall the tradition of homemade cakes, enriched, however, by a more exotic touch provided by coconut.
