Cake with a Chocolate Mousse Heart

Ingredients
For the cake base:
- 200 g of dry biscuits (such as Digestive)
- 100 g of melted butter
For the chocolate mousse:
- 200 g of dark chocolate
- 3 eggs (yolks and whites separated)
- 50 g of sugar
- 200 ml of fresh cream
For the topping:
- 100 g of dark chocolate
- 100 ml of fresh cream

Start by finely chopping the dry biscuits. Mix them with the melted butter until you get a homogeneous mixture. Spread this mixture on the bottom of a springform pan, previously lined with parchment paper, pressing well to create a compact layer. Put it in the fridge to set.

Prepare the chocolate mousse. Melt the chocolate in a double boiler and let it cool down. In a bowl, beat the yolks with the sugar until you get a frothy and light mixture. In another bowl, beat the egg whites until stiff peaks form. Finally, whip the fresh cream separately.

Gently incorporate the melted chocolate into the beaten yolks. Then add the whipped cream and finally, the beaten egg whites, stirring from the bottom up so as not to dismantle the mixture.

Pour the mousse over the biscuit base and level the surface. Put in the refrigerator for at least 4 hours, or even better, overnight.
