Cake with Amaretti and Syrupy Peaches

The cake with amaretti and syrupy peaches is a delicious dessert combining the sweetness of peaches with the crunch of amaretti. Here’s how to prepare it:

Ingredients

  • 200 g of amaretti
  • 150 g of all-purpose flour
  • 150 g of sugar
  • 3 eggs
  • 80 g of melted butter
  • 1 packet of baking powder
  • 1 jar of syrupy peaches (about 500 g)
  • Icing sugar (for decoration)
  • Butter and flour for the cake mold

Preparation

  1. Preheat the oven to 180 °C and prepare a cake mold (about 24 cm in diameter), buttering and flouring it.
  2. Blend the amaretti in a mixer until you get a coarse flour.
  3. In a bowl, beat the eggs with sugar until you get a light and fluffy mixture.
  4. Add the melted (cooled) butter, continuing to mix.
  5. Gently incorporate the sifted flour with the baking powder, then the crushed amaretti.
  6. Drain the syrupy peaches and cut them into slices or dice.
  7. Incorporate the peaches into the mixture, setting some aside to decorate the surface of the cake.
  8. Pour the mixture into the prepared mold and decorate with the peach slices you set aside.
  9. Bake for about 40 minutes, or until a toothpick inserted in the center of the cake comes out clean.
  10. Remove the cake from the oven and let it cool, then dust with icing sugar before serving.

This cake is excellent as a dessert after a meal or as a snack. The combination of amaretti and peaches is typical of the cuisine of Northern Italy, particularly Piedmont, where the amaretti of Mombaruzzo are famous. Alternatively, you can also use fresh peaches, cooking them with a little sugar and water to create a homemade syrup.
