Almond Flour Cake

Ingredients

  • 200 g of almond flour
  • 150 g of sugar
  • 100 g of soft butter
  • 4 eggs
  • 1 lemon (grated zest)
  • 1 teaspoon of vanilla extract
  • 1 packet of baking powder
  • A pinch of salt

Preparation

  1. Preheat the oven to 180 °C and prepare a buttered and floured cake pan, or line it with parchment paper.
  2. In a large bowl, mix the almond flour, sugar, baking powder, and salt.
  3. Add the soft butter and blend everything with an electric mixer or a spatula until you have a smooth mixture.
  4. Incorporate the eggs one at a time, making sure each egg is well blended before adding the next.
  5. Add the grated zest of lemon and vanilla extract, mixing well.
  6. Pour the batter into the prepared cake pan and bake for about 30-40 minutes or until a toothpick inserted in the center of the cake comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes, then transfer it onto a wire rack to cool completely.
