Poured Cake with Jam

The poured cake with jam is a simple and delicious dessert that you can easily prepare at home. This recipe is based on the idea of creating a soft and fragrant sweet, with the sweet and slightly tangy heart of the jam mixing into the soft batter during baking. Here’s how to make it.

Ingredients

  • 300 g of all-purpose flour
  • 200 g of sugar
  • 3 eggs
  • 125 g of melted butter
  • 1 sachet of baking powder
  • A pinch of salt
  • Grated zest of 1 lemon (optional)
  • Jam of your choice (about 300 g)

Preparation

  1. Preheat the oven to 180 °C.
  2. Beat the eggs and sugar in a large bowl until light and frothy.
  3. Gradually add the melted butter, continuing to stir.
  4. Fold in the sifted flour with the baking powder and pinch of salt, and if desired, the grated lemon zest.
  5. Butter and flour a cake pan, then pour half of the batter into the pan.
  6. Spread an even layer of jam over the surface of the poured batter.
  7. Cover with the remaining batter, trying not to mix it with the jam.
  8. Bake and cook for about 35-40 minutes or until a skewer inserted in the center of the cake comes out clean.
  9. Let the cake cool before unmolding and serving.

Curiosity

The poured cake gets its name from the method by which the jam is distributed within the raw batter before baking, resulting in unique and surprising marbled effects once baked. It is possible to play with different types of jam to always obtain new and tasty flavors. Moreover, it is an excellent way to use up those homemade jams that sometimes remain unused at the bottom of the pantry.
