Cabbage Salad

Ingredients

  • 1/2 head of cabbage
  • 2 carrots
  • 1 apple (optional for a touch of sweetness)
  • Juice of 1 lemon
  • Extra-virgin olive oil
  • Salt and pepper to taste
  • A sprig of fresh parsley (optional)
  • Vinegar (white wine or apple cider)

Preparation

  1. Begin by cleaning the cabbage: remove the outer leaves, cut away the tough bottom part, and remove the central core. Then, finely slice the cabbage to obtain thin strips.
  2. Peel the carrots and grate them with a coarse grater.
  3. (Optional) If you wish to add a touch of sweetness, peel an apple and cut it into cubes or thin strips.
  4. In a large bowl, combine the sliced cabbage, grated carrots, and, if you have decided to use it, the apple. Mix well.
