Cabbage rolls with cod fillets

Ingredients

  • 8 large cabbage leaves
  • 4 cod fillets (about 150 g each)
  • 2 cloves of garlic
  • 200 ml of tomato purée
  • 1 glass of white wine
  • Extra virgin olive oil

  • Chopped parsley (to garnish)
  • (Optional) Black olives or capers for a Mediterranean touch

Preparation

  1. Begin by blanching the cabbage leaves in boiling salted water for about 2-3 minutes. Then, drain them and put them in cold water to stop the cooking process and maintain their bright color.

  2. In the meantime, clean the cod fillets if necessary, removing any bones. Season them with a little salt and pepper.

  3. Spread the cabbage leaves on a work surface and place a cod fillet on each one. Wrap the leaves around the fish, sealing the rolls well.

  4. In a large skillet, sauté the garlic cloves in extra virgin olive oil and then remove them. Put the rolls in the pan and let them brown lightly on both sides.

  5. Deglaze with the white wine and let the alcohol evaporate for a couple of minutes.

  6. Add the tomato purée, salt, and pepper to taste. If you like, you can enrich the sauce with black olives or capers. Cook over medium-low heat for about 15-20 minutes with the lid on, turning the rolls halfway through cooking.

  7. Once cooked, transfer the rolls to a serving plate and sprinkle with fresh chopped parsley to garnish.
