Cabbage Fritters

Cabbage fritters are an excellent choice for a crunchy and tasty snack or appetizer. Here is a recipe to prepare them:

Ingredients

  • 300g of savoy cabbage
  • 200g of flour
  • 2 eggs
  • 100 ml of milk
  • 50g of grated cheese (Parmesan or pecorino)
  • Nutmeg (to taste)
  • Salt and pepper
  • Oil for frying

Preparation

  1. Start by finely chopping the cabbage and blanch it in slightly salted water for a few minutes. After draining it well, let it cool down.
  2. In a bowl, beat the eggs and add the milk, mixing well to obtain a homogeneous mixture.
  3. Add the sifted flour to the liquid mixture, a pinch of nutmeg, salt, and pepper. Stir until you get a smooth, lump-free batter.
  4. Incorporate the cooked cabbage and grated cheese into the batter and mix well so that everything is evenly distributed.
  5. Heat plenty of oil in a pan and, once it is hot, use a spoon to take small amounts of the cabbage batter and drop them into the hot oil. Let the fritters puff up and become golden on both sides.
  6. Once ready, drain the fritters on paper towels to remove excess oil.
  7. Serve the fritters hot and crispy.

These cabbage fritters become even more interesting if accompanied by a dip or cream. For example, you could prepare a simple yogurt sauce with chopped chives, salt, and pepper, or a sweet and sour sauce for a special touch.
