Butter-free Muffins

Butter-free muffins are a lighter choice and can be equally delicious. Here’s a basic recipe for making them:

Ingredients

  • 250 g of flour (preferably 00 for sweets)
  • 200 ml of milk
  • 100 g of granulated sugar
  • 80 ml of seed oil (as a lighter alternative to butter)
  • 2 eggs
  • 1 packet of baking powder
  • 1 pinch of salt
  • Flavoring of choice (vanilla, grated lemon zest, etc.)

Preparation

  1. Preheat the oven to 180 °C.
  2. In a bowl, whisk the eggs with the sugar until frothy.
  3. Gradually add the oil, continuing to mix.
  4. Pour in the milk and add the chosen flavoring.
  5. In a separate container, combine the flour, baking powder, and pinch of salt, sifting them to avoid lumps.
  6. Fold the dry ingredients into the wet mixture, gently mixing with a spatula in an upward motion to avoid deflating the batter.
  7. Pour the mixture into the muffin cups, filling them about 3/4 full.
  8. Bake the muffins for about 20-25 minutes or until a toothpick inserted into the center comes out clean.
  9. Remove the muffins from the oven and let them cool on a wire rack before serving.

Muffins have Anglo-Saxon origins and are known for their versatility. Without butter, you get a slightly different texture but still very enjoyable. You can further customize your muffins by adding fruit to the recipe, such as blueberries or apple pieces, or chocolate chips for a sweeter variant.
