Butterless Cookies

I can suggest a simple recipe for making butterless cookies. Remember that many recipes use butter to make cookies crumbly. As a substitute, we can use seed oil or extra virgin olive oil for a more Mediterranean touch.

Ingredients

  • 250 grams of flour (all-purpose or whole wheat, depending on preference)
  • 100 grams of granulated sugar (or brown sugar for a more rustic flavor)
  • 1 egg
  • 80 ml of seed oil or extra virgin olive oil (for a more intense flavor)
  • 1 teaspoon of vanilla extract or grated lemon zest
  • 1 pinch of salt
  • Half a sachet of baking powder

Preparation

  1. Preheat the oven to 180 °C.
  2. In a bowl, mix the flour with the baking powder and a pinch of salt.
  3. In another bowl, beat the egg with the sugar until it becomes a frothy and light mixture. Add the vanilla extract or lemon zest.
  4. Incorporate the oil into the mixture of egg and sugar, mixing well to amalgamate the ingredients.
  5. Pour the liquid ingredients into the bowl containing the dry ingredients and mix with a spatula or hands until the dough is uniform.
  6. Line a baking tray with parchment paper.
  7. Take small portions of dough, form into balls and slightly flatten them to shape the cookies.
  8. Place the cookies on the tray, spacing them slightly apart.
  9. Bake for about 10-15 minutes, or until the edges begin to brown.
  10. Take the cookies out of the oven and let them cool on a wire rack before serving.

Curiosity

If you want to add a more personal touch, you can include in the recipe dried fruit such as chopped nuts or almonds, or chocolate chips or pieces of candied fruit. Make sure to mix them into the dough before shaping the cookies. This is a very versatile base that you can add some ingredients to make the cookies even more special!
