Butter Cookies with Whipped Shortcrust

The butter cookies with whipped shortcrust are crumbly and tasty sweet treats, perfect to accompany tea or coffee. Here is the recipe to prepare them:

Ingredients

  • 250 g of soft butter
  • 100 g of powdered sugar
  • 1 packet of vanillin or seeds from one vanilla pod
  • 1 pinch of salt
  • 400 g of 00 flour
  • 1 egg (optional, to make the dough lighter)

Preparation

  1. In a bowl, whip the soft butter with the powdered sugar until you get a frothy and pale mixture. If you own a stand mixer or a kitchen mixer, use it to facilitate this step.
  2. Add the vanillin or vanilla seeds and a pinch of salt, continuing to whip.
  3. At this point, if you prefer a lighter and less crumbly dough, you can integrate an egg into the mixture and whip until it is completely incorporated.
  4. Fold in the sifted flour, adding it a little at a time and continuing to mix until the dough is uniform.
  5. Place the dough in a piping bag with a star nozzle and shape the cookies directly on a baking tray lined with parchment paper. You can give the cookies the shape you prefer, such as rosettes or sticks.
  6. Let the cookies rest in the refrigerator for about 30 minutes. This step will help maintain their shape during baking.
  7. Preheat the oven to 180 °C.
  8. Bake the cookies for 10-15 minutes, or until they are slightly golden on the edges.
  9. Remove the cookies from the oven and let them cool on a wire rack for sweets.

Interesting facts

These cookies lend themselves to multiple variations: for example, you can add chocolate chips, grated orange zest, or dip half the cookie in melted chocolate once they have cooled to the dough. Whipped shortcrust is also a perfect base for creating decorated cookies because it retains its shape very well during baking.

Have fun and enjoy your tasting!
