Burrito

The burrito is a Mexican street food known all over the world. The traditional preparation calls for a wheat flour tortilla that wraps around various ingredients such as meat, beans, cheese, and sauce. Here is the recipe with an Italian twist:

Ingredients

  • 4 large flour tortillas
  • 400 g of minced beef
  • 200 g of canned red beans, drained and rinsed
  • 100 g of rice
  • 100 g of cheddar cheese or an Italian stretchy cheese like provola or mozzarella
  • 1 medium onion
  • 2 cloves of garlic
  • 1 red pepper
  • 2 ripe tomatoes or tomato sauce
  • Extra virgin olive oil
  • Paprika, cumin, coriander powder
  • Salt and pepper to taste
  • Guacamole and sour cream to accompany (optional)

Preparation

  1. Start by cooking the rice as usual, then set it aside to cool.
  2. In a large pan, heat a drizzle of extra virgin olive oil and sauté the finely chopped onion and garlic until they become transparent.
  3. Add the minced beef and cook until it changes color, breaking it up with a wooden spoon.
  4. Incorporate the diced pepper and cook for another 5 minutes.
  5. Season with paprika, cumin, coriander, salt, and pepper to taste and mix well.
  6. Add the chopped tomatoes or tomato sauce and the beans. Let it cook over medium heat for about 10 minutes until the sauce thickens.
  7. Take the tortillas and warm them slightly in a pan or microwave to make them softer and easier to fold.
  8. Assemble the burritos by laying some rice, the meat and vegetable mixture, and a handful of cheese on each tortilla.
  9. Fold the edges of the tortilla inward and roll up tightly to close the burrito.
  10. You can serve the burritos as they are or grill them lightly on a griddle to slightly toast the tortilla and melt the cheese.

Serve the burritos with guacamole and sour cream to your liking.
