Ingredients
- 2 fresh eggs
- Salt to taste
- Freshly ground black pepper to taste
- Olive oil or butter
Preparation
- Heat a non-stick pan and add a drizzle of olive oil or a knob of butter.
- Once the oil or butter is hot, carefully break the eggs directly into the pan, taking care not to break the yolks.
- Let the eggs fry over medium-low heat.
- Season the eggs with a pinch of salt and freshly ground black pepper.
- You can choose to leave the yolk soft or cook the eggs longer if you prefer a firmer yolk.
- When the whites are fully cooked and the yolk has reached the desired consistency, use a spatula to transfer the eggs onto a plate.

Sunny-side-up eggs are so named because the yolk in the center of the white resembles a bull’s eye. They are also known in English as “sunny side up” for the way the yolk looks like a shining sun. In Italy, it’s common to accompany sunny-side-up eggs with a slice of toasted bread, used as a base for the soft and creamy yolk.
