Bull's eye

Bull’s eye biscuits are delicious pastry treats, also known as jam biscuits. Here’s how to prepare them.

Ingredients

  • 300g of type 00 flour
  • 200g of cold butter, cubed
  • 100g of icing sugar
  • 1 whole egg
  • 1 egg yolk
  • Grated zest of 1 untreated lemon
  • 1 pinch of salt
  • Apricot jam or another flavor of your choice

Preparation

  1. In a large bowl, mix the flour with the icing sugar and a pinch of salt.
  2. Add the cold cubed butter and work the mixture quickly with your fingertips until you achieve a sandy consistency.
  3. Make a well in the center and add the whole egg, the yolk, and the grated lemon zest.
  4. Knead quickly until you have a homogeneous mass, then form a ball, wrap it in cling film and let it rest in the fridge for at least 30 minutes.
  5. Preheat the oven to 180°C.
  6. Roll out the dough on a lightly floured surface to approximately 5mm thickness.
  7. With a round cookie cutter, cut out circles and place them on a baking tray lined with parchment paper.
  8. From half of the circles, cut out an additional small circle in the center to create the “bull’s eye” effect.
  9. Bake for about 10-12 minutes or until the edges become lightly golden.
  10. Once baked and cooled, spread a bit of jam on the full base and top with the circle with the hole, pressing slightly to adhere.

Curiosity

The name “Bull’s eye” comes from the classic shape of these biscuits, which resembles an eye: a full base and a lid with a central hole that reveals the jam, similar to a pupil. They are ideal for breakfast or for a sweet afternoon break, perhaps accompanied by a good tea or coffee. Additionally, you can create small cookies with the leftover dough to bake and enjoy separately. Enjoy your meal!
