Ingredients
- 200 g of buckwheat flour
- 100 g of butter at room temperature
- 80 g of granulated sugar
- 1 egg
- 1 teaspoon of honey
- 1 pinch of salt
- 1/2 teaspoon of baking powder
- Optional: grated zest of 1 lemon or vanilla to flavor
Preparation
- In a bowl, mix the soft butter with the sugar using a wooden spoon or a spatula, until the mixture is creamy and smooth.
- Add the egg and honey to the mixture and continue mixing until you have a smooth dough.
- In a separate bowl, sift the buckwheat flour with the baking powder and salt. If you wish, also add the grated lemon zest or vanilla.
- Incorporate the dry ingredients into the mixture of butter, sugar, and egg, mixing well until forming a dough that easily detaches from the sides of the bowl.
- Form a ball with the dough and wrap it in clear film. Let it rest in the refrigerator for at least 30 minutes.
- Preheat the oven to 180 °C (356 °F) and prepare a baking sheet by lining it with parchment paper.
- Take the dough out of the refrigerator and roll it out on a lightly floured surface to a thickness of about 5 mm.
- Use cookie cutters to cut out the dough into the desired shapes and place the cookies on the prepared baking sheet.
- Bake for about 10-12 minutes or until the edges of the cookies start to become slightly golden.
- Remove the cookies from the oven and let them cool completely on a rack before serving.
Curiosity
Buckwheat is not a true cereal, but a seed of a herbaceous plant; it is gluten-free and rich in minerals, making these cookies also suitable for those following a gluten-free diet. These cookies have a rustic flavor and a slightly nutty aftertaste that makes them particularly suitable to be accompanied by tea or coffee.
