Buckwheat Cookies

Buckwheat cookies are a delicious specialty that can be enjoyed at any time of the day. Here is the recipe:

Ingredients

  • 200 g of buckwheat flour
  • 100 g of butter at room temperature
  • 80 g of granulated sugar
  • 1 egg
  • 1 teaspoon of honey
  • 1 pinch of salt
  • 1/2 teaspoon of baking powder
  • Optional: grated zest of 1 lemon or vanilla to flavor

Preparation

  1. In a bowl, mix the soft butter with the sugar using a wooden spoon or a spatula, until the mixture is creamy and smooth.
  2. Add the egg and honey to the mixture and continue mixing until you have a smooth dough.
  3. In a separate bowl, sift the buckwheat flour with the baking powder and salt. If you wish, also add the grated lemon zest or vanilla.
  4. Incorporate the dry ingredients into the mixture of butter, sugar, and egg, mixing well until forming a dough that easily detaches from the sides of the bowl.
  5. Form a ball with the dough and wrap it in clear film. Let it rest in the refrigerator for at least 30 minutes.
  6. Preheat the oven to 180 °C (356 °F) and prepare a baking sheet by lining it with parchment paper.
  7. Take the dough out of the refrigerator and roll it out on a lightly floured surface to a thickness of about 5 mm.
  8. Use cookie cutters to cut out the dough into the desired shapes and place the cookies on the prepared baking sheet.
  9. Bake for about 10-12 minutes or until the edges of the cookies start to become slightly golden.
  10. Remove the cookies from the oven and let them cool completely on a rack before serving.
