Bucatini with Sardine Sauce

Ingredients
- 400 g of bucatini
- 400 g of fresh sardines
- 1 small onion
- 2 cloves of garlic
- 200 ml of tomato puree
- A bunch of fresh parsley
- 60 ml of extra virgin olive oil
- Salt to taste
- Pepper to taste
- A pinch of red pepper flakes (optional)
Preparation
- Clean the sardines by removing the head, guts, and central bone, then wash and dry them.
- Finely chop the onion and garlic and sauté them in a pan with the extra virgin olive oil.
- Once the onion has become transparent, add the sardines and let them cook for a couple of minutes.
- Add the tomato puree, salt, pepper, and red pepper flakes to taste. Let it simmer for about 15-20 minutes.
- In the meantime, bring a pot of water to a boil and cook the bucatini according to the package instructions to achieve the desired doneness.
- Transfer the drained bucatini directly into the pan with the sardine sauce and mix well to blend.
- Plate the bucatini and, if desired, sprinkle with chopped fresh parsley.
