Bucatini with Crispy Zampone and Artichokes

Ingredients
- 320 g of bucatini
- 200 g of precooked zampone
- 4 artichokes
- 1 clove of garlic
- Extra virgin olive oil (as needed)
- Salt and pepper (to taste)
- Chopped parsley (optional)
- Pasta cooking water (a cup)
- Grated Pecorino Romano cheese (optional)

Start by cleaning the artichokes: remove the tougher outer leaves, cut off the tips and remove any fluff on the inside with a teaspoon. Cut the artichokes into wedges and immerse them in lemony water to prevent them from turning black.

In a large skillet, heat a drizzle of extra virgin olive oil and add a clove of garlic. Let it lightly fry and then add the drained artichokes.

Let the artichokes cook for about 10-15 minutes over medium heat, adding a little water if necessary to prevent sticking. They should become soft but still slightly al dente.

Meanwhile, cut the precooked zampone into cubes and brown them in a nonstick pan without adding fats until they become crispy.

In a large pot, bring plenty of salted water to a boil and cook the bucatini according to the package instructions, trying to keep them al dente.

Drain the bucatini and save a cup of the cooking water.

Transfer the bucatini to the skillet with the artichokes, add the crispy zampone cubes and a little of the cooking water to bind everything together.

Stir well to combine the ingredients, letting them flavor together for a couple of minutes on high heat.

If you wish, for a touch of savoriness, add grated Pecorino Romano cheese and mix.

Finish with a sprinkle of chopped parsley, adjust salt and pepper to taste, and serve hot.
