Bruschetta with Olive Cream

Ingredients

  • Slices of homemade bread or Tuscan bread
  • 200 g of pitted black olives
  • 2 tablespoons of desalted capers
  • 1 clove of garlic
  • A few leaves of fresh basil
  • Extra virgin olive oil as needed
  • Salt as needed

Preparation

  1. To prepare the olive cream, put the pitted black olives, the desalted capers, the garlic clove (if you prefer a milder taste you can omit the garlic or reduce the amount), the basil and a pinch of salt into a blender. Blend everything, adding extra virgin olive oil in a thin stream until you achieve a homogeneous and spreadable cream.

  2. In the meantime, heat an oven or a grill and toast the slices of bread until they are crispy and golden brown.

  3. Once the slices of bread are ready, rub them gently with another clove of garlic cut in half to infuse them with a slight aroma.

  4. Spread a generous amount of olive cream on the toasted bread slices.

  5. If desired, you can finish the bruschetta with a drizzle of extra virgin olive oil and some fresh basil leaves for decoration.
