Chocolate Brownies with Mini Eggs

Here’s a delicious recipe for chocolate brownies with chocolate mini eggs, which are a sweet addition making them particularly suitable during the Easter holidays.

Ingredients

  • 200 g of dark chocolate
  • 150 g of unsalted butter
  • 250 g of granulated sugar
  • 3 medium-sized eggs
  • 1 teaspoon of vanilla extract
  • 100 g of all-purpose flour
  • 20 g of unsweetened cocoa powder
  • 1 pinch of salt
  • 100 g of chocolate mini eggs (or more, to taste)

Preparation

  1. Preheat the oven to 180 degrees C (350 degrees F) and line a 20x20 cm (8x8 inch) square baking pan with parchment paper.

  2. Break up the dark chocolate and melt in a double boiler with the butter. Stir to ensure that the chocolate is completely melted. Allow to cool slightly.

  3. In a medium bowl, beat the eggs with the sugar until light and fluffy. Add the vanilla extract and stir.

  4. Fold the melted chocolate and butter into the egg mixture, mixing gently.

  5. Sift the flour, cocoa powder, and salt into another bowl, then fold these dry ingredients into the wet mixture, stirring until you have a smooth and homogeneous batter.

  6. Pour half of the batter into the prepared pan, distribute half of the chocolate mini eggs evenly, then add the remaining batter and top with the remaining mini eggs.

  7. Bake for about 20-25 minutes or until a toothpick inserted in the center comes out with a few crumbs attached (it should not come out completely dry, or else the brownies will be overcooked).

  8. Allow to cool completely in the pan, then cut into squares and serve.
