Broccoli Flan

Ingredients

  • 500 g of broccoli
  • 3 eggs
  • 100 g of grated cheese (pecorino or parmesan)
  • 200 ml of bechamel sauce
  • Salt and pepper to taste

  • Breadcrumbs

Preparation

  1. Start by cleaning the broccoli, separating the florets from the trunk and discarding the harder part. Rinse the florets under running water.
  2. Cook the broccoli in boiling salted water for about 5-7 minutes or until they are soft but still al dente. Then, drain and let them cool slightly.
  3. Preheat the oven to 180 °C (350 °F).
  4. In the meantime, in a large bowl, beat the eggs with salt and pepper. Add the grated cheese and mix until you have a smooth mixture.
  5. Coarsely chop the cooled broccoli and add it to the egg and cheese mixture.
  6. Gently incorporate the bechamel sauce into the mixture, being careful not to deflate the eggs.
  7. Take a baking dish that can go in the oven, grease the bottom and sides with butter, and sprinkle with some breadcrumbs.
  8. Pour the mixture into the mold and level the surface.
  9. Sprinkle the surface with more breadcrumbs to create a crispy crust during baking.
  10. Bake in the oven for about 30 minutes or until the top of the flan is golden and crispy.
  11. Let it cool down for a few minutes before serving.

The broccoli flan is ready! You can enjoy it on its own or pair it with a fresh salad for a light meal.
