Broccoli Velouté

Ingredients

  • 400 g of broccoli
  • 1 medium potato
  • 1 onion
  • 1 clove of garlic
  • 750 ml of vegetable broth
  • 50 ml of cooking cream (optional for a creamier variant)
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese to serve (optional)
  • Bread croutons or breadsticks to accompany (optional)

Preparation

  1. Clean the broccoli by separating the florets from the stem and discarding the woody part. Wash the florets under running water.

  2. Peel the potato and cut it into uniformly sized cubes.

  3. Peel and thinly slice the onion and garlic.

  4. In a large pot, lightly fry the onion and garlic with a drizzle of extra virgin olive oil until the onion becomes transparent.

  5. Add the broccoli and potatoes to the pot, stir and let flavor for a couple of minutes.

  6. Pour the vegetable broth into the pot until the ingredients are covered, bring to a boil, and then lower the heat and let simmer for about 15-20 minutes, or until the broccoli and potatoes become soft.

  7. Remove the pot from the heat and let the soup cool slightly.

  8. Use an immersion blender to blend until a smooth and creamy texture is obtained. If you prefer a smoother velouté, you can strain the mixture through a sieve.

  9. Return the broccoli velouté to the heat and, if desired, add the cream to make the soup even creamier.

  10. Taste and adjust seasoning with salt and pepper according to personal preference.

  11. Serve the warm velouté, garnished with a drizzle of extra virgin olive oil, some grated Parmesan cheese and, if you like, accompanied by bread croutons or breadsticks.
