Ingredients

  • 300g of risotto rice (such as Carnaroli or Arborio)
  • 1 small onion
  • Vegetable broth as needed
  • 200g of broccoli
  • 150g of sweet gorgonzola
  • 50g of grated Parmesan cheese
  • 1 egg
  • Breadcrumbs as needed
  • Flour as needed
  • Oil for frying

Preparation

  1. Begin by preparing the risotto. Finely chop the onion and sauté it with a drizzle of oil in a large pan until transparent. Add the rice and toast it for a couple of minutes.
  2. Gradually add the hot vegetable broth, stirring often, until the rice is cooked but still al dente.
  3. Once ready, remove from the heat and stir in the Parmesan. Spread the risotto on a tray to cool it down more quickly.
  4. In the meantime, clean the broccoli, cut them into florets, and cook in salted boiling water for about 7-8 minutes or until tender. Drain and blend them until you get a cream.
  5. Mix the broccoli cream with crumbled gorgonzola until well combined and creamy. If necessary, use a bit of milk to achieve the desired consistency.
  6. Take some cooled rice, create a cavity, and place a spoonful of broccoli and gorgonzola cream in the center, then close with more rice to form a ball. Continue in this way until all ingredients are used up.
  7. Dip each arancino in flour, then in the beaten egg, and finally in the breadcrumbs, making sure they are well coated.
  8. In a pot, heat plenty of oil and fry the arancini until golden and crispy.
  9. Drain them on paper towels to remove excess oil before serving.
