Broccoli and Salmon Balls

Broccoli and salmon balls can be a healthy and balanced dish that combines the delicate taste of fish with the fiber and vitamins of broccoli. Here’s how to prepare delicious broccoli and salmon balls with an Italian twist.

Ingredients

  • 300 g of fresh salmon
  • 300 g of broccoli
  • 1 egg
  • 50 g of breadcrumbs
  • 30 g of grated Parmesan cheese
  • 1 clove of garlic
  • Chopped parsley to taste
  • Salt to taste
  • Pepper to taste
  • Extra virgin olive oil to taste

Preparation

  1. Start by cleaning the broccoli: separate the florets and blanch them in slightly salted water until they are tender but still al dente. After cooking, drain well and let cool.

  2. Meanwhile, cook the salmon. You can steam it, bake it or pan-fry it with a drizzle of extra virgin olive oil, making sure it remains moist and not too dry.

  3. Once cooked, let the salmon cool and then flake it with your hands or with a fork until it is reduced to small pieces.

  4. In a large bowl, combine the broccoli, flaked salmon, Parmesan, an egg, breadcrumbs, finely chopped garlic (if desired), parsley, salt, and pepper to taste.

  5. Mix all the ingredients well until you get a homogeneous mixture, with which you will form meatballs of the desired size, rolling them between your hands.

  6. Heat a drizzle of extra virgin olive oil in a non-stick pan and cook the broccoli and salmon balls until they are golden brown and crispy on all sides.

  7. Drain them on paper towels to remove excess oil before serving your hot meatballs.

Optional: If you prefer a lighter cooking method, you can place the meatballs on a baking sheet lined with parchment paper and bake them in a preheated oven at 200 °C for about 15-20 minutes or until golden brown.
