Brisée Baskets with Goat Cheese and Herbs

Here is the recipe for making delicious brisée pastry baskets with goat cheese and herbs, a refined and tasty appetizer that always makes a good impression.

Ingredients

  • 1 ready-made roll of brisée pastry (or you can make it yourself with 200g of flour, 100g of butter, a pinch of salt, and a little cold water)
  • 200g of fresh goat cheese
  • 150g of mixed herbs (spinach, chard, arugula, etc.)
  • 2 tablespoons of grated Parmesan cheese
  • Extra virgin olive oil
  • Salt and pepper
  • 1 clove of garlic (optional)
  • Quail eggs or regular eggs (optional for garnishing)

Preparation

  1. Preheat the oven to 180 °C.
  2. Prepare the brisée pastry if not using the ready-made kind. Mix flour with butter cut into pieces, salt, and enough water to form a smooth dough. Let it rest in the fridge for about 30 minutes.
  3. In the meantime, wash the herbs and sauté them in a pan with a drizzle of oil and a whole garlic clove, which you’ll remove at the end of cooking. Season with salt and pepper.
  4. Roll out the brisée pastry and cut out circles slightly larger than the cavities of a muffin tin, to form baskets.
  5. Place the pastry circles into the cavities of the muffin tin and prick the bottom with a fork to prevent puffing during baking.
  6. Bake the pastry in the oven for about 10-15 minutes or until golden.
  7. Meanwhile, mash the goat cheese with a fork and mix it with the grated Parmesan.
  8. Once the brisée pastry baskets are ready, fill them with a spoonful of goat cheese and then add the sautéed herbs.
  9. You can choose to serve them as is or put them back in the oven for another 5 minutes to slightly melt the goat cheese.
  10. If desired, you can top each basket with a raw quail egg and bake again until the egg is just set.
  11. Serve the baskets warm or at room temperature.
