Brioche Rosebuds
17/11/2023Brioche rosebuds are delicious and decorative, perfect for a special breakfast or a buffet. Here’s how to prepare them:
Ingredients
- 500 g of 00 flour
- 250 ml of lukewarm milk
- 70 g of sugar
- 2 eggs
- 80 g of soft butter
- 12 g of fresh brewer’s yeast (or 4 g of dry brewer’s yeast)
- 1 pinch of salt
- Powdered sugar (optional, for decoration)
- Jam or Nutella for filling (optional)
Preparation
- In a large bowl, dissolve the yeast in the lukewarm milk with a teaspoon of sugar taken from the total. Leave to rest for a few minutes until you see bubbles appear on the surface.
- In the same bowl, add the flour and start mixing. Then incorporate the eggs and sugar one at a time.
- Add the soft butter in pieces and a pinch of salt, then work the dough until it has a smooth and homogeneous consistency. If necessary, you can knead the dough on a lightly floured surface to make it more manageable.
- Form a ball with the dough, place it in a lightly oiled bowl, cover with a kitchen towel and leave to rise in a warm place for about 2 hours or until the dough has doubled in volume.
- Once risen, take the dough and roll it out on a floured surface, forming a rectangle. If you want to fill your rosebuds, spread a thin layer of jam or Nutella over the rectangle of dough.
- Roll up the dough from the long side, forming a cylinder, and cut slices of about 4-5 cm thick.
- Take each slice and make two cuts, leaving the central part attached, then twist the three strips obtained to form a kind of rose.
- Place the rosebuds on a baking sheet covered with parchment paper, spaced apart, cover with a kitchen towel and let rise again for about 30-40 minutes.
- Finally, bake in a preheated oven at 180 °C for about 15-20 minutes or until the rosebuds are golden.
- Remove from the oven and let cool. If desired, you can dust the rosebuds with powdered sugar before serving.

Brioche rosebuds can be reinterpreted in many ways: in addition to the sweet filling, you can try filling the dough with pesto, spreadable cheese, olive tapenade, or any other savory cream you prefer. This makes them perfect not only for breakfast or as a snack but also as an appetizer or aperitif.
