Bresaola and Spinach Rolls
17/11/2023Bresaola and spinach rolls are a tasty and easy-to-make appetizer. Here is the recipe:
Ingredients
- 100 g of bresaola (thin slices)
- 200 g of fresh spinach
- 1/2 lemon (juice only)
- 100 g of ricotta or spreadable cheese (such as goat cheese or robiola)
- Salt and pepper to taste
- Extra virgin olive oil
- Walnuts or pine nuts (optional)
- Parmesan or gran padano (optional, for garnish)
Preparation

Begin by washing the spinach under running water. Afterwards, cook them in a pan with a drizzle of oil and a pinch of salt until they have wilted. If you prefer, you can also just blanch them in salted water for a couple of minutes and then squeeze out the water.

Once cooked, allow the spinach to cool down and chop it coarsely with a knife.

In a bowl, combine the spinach with the ricotta or the spreadable cheese you have chosen, add the lemon juice, and season with salt and pepper to taste. If you like, you can also add some chopped walnuts or pine nuts to add crunch to the filling.

Lay out the slices of bresaola on a work surface and spread a spoonful of the filling on each slice.

Gently roll the slices of bresaola to form rolls. If necessary, you can secure them with a toothpick.

Place the rolls on a serving dish and, if you wish, finish with shavings of parmesan or gran padano cheese and a raw drizzle of extra virgin olive oil.

The rolls are ready to be served. You can enjoy them immediately or store them in the refrigerator until it’s time to serve.

Bresaola is a cold cut typical of Valtellina, an alpine area of Lombardy, known for its soft texture and delicate flavor. It is also a very lean food and high in protein content, often used in low-calorie diets.
