Bresaola and Cheese Cones

Bresaola and cheese cones are a delicious appetizer that’s very simple to prepare. Here is the recipe to make them.

Ingredients

  • 12 slices of bresaola
  • 150 gr of spreadable fresh cheese (such as ricotta or goat cheese)
  • 2 tablespoons of grated Parmesan cheese
  • Finely chopped chives
  • Salt and black pepper to taste
  • Optional: chopped walnuts or dried fruit pieces, arugula or other small greens for garnish

Preparation

  1. In a bowl, mix the spreadable fresh cheese with the Parmesan, chopped chives, salt, and pepper. If you want to add a crunchy touch, you can also incorporate some chopped walnuts or dried fruit.
  2. Lay out the slices of bresaola on a flat surface. If you like, you can put a little arugula in the center of each slice to give a peppery and crunchy note.
  3. Take a small amount of the cheese filling and place it in the center of each slice of bresaola.
  4. Gently roll the bresaola around the filling, creating a cone shape.
  5. If necessary, to maintain the shape, you can tie the cone with a chive or secure it with a toothpick.
  6. Arrange the bresaola and cheese cones on a serving plate and, if desired, garnish with additional chives, chopped walnuts or dried fruit.
  7. Serve immediately to enjoy the cones at the best of their freshness and texture.

Curiosity

Bresaola is a typical charcuterie from Valtellina, in Lombardy, made from dried and aged beef meat. This cone preparation is a creative and elegant way to serve bresaola, perfect for appetizers or aperitifs. Furthermore, the contrast between the delicate and creamy flavor of the cheese and the stronger and saltier flavor of the bresaola creates a tasty and appreciated balance.
