Breaded Chicken Cutlets
17/11/2023Breaded chicken cutlets are a tasty and relatively simple second course to prepare. Here is the recipe:
Ingredients
- 4 chicken breasts
- Salt and pepper to taste
- Flour, as needed for breading
- 2 eggs
- Breadcrumbs, as needed for breading
- Seed oil for frying (alternatively, olive oil for healthier cooking)
- (Optional) Garlic powder or herbs to enrich the breadcrumbs
Preparation
- Start by lightly beating the chicken breasts between two sheets of kitchen film or parchment paper until they are evenly thin, but without puncturing them.
- Season the chicken breasts with salt and pepper on both sides.
- Prepare three deep plates: in the first put the flour, in the second beat the eggs with a pinch of salt, in the third put the breadcrumbs (if you want, you can add garlic powder or aromatic herbs such as oregano, thyme, or chopped rosemary to add more flavor).
- Coat the chicken breasts in the flour, ensuring it is well distributed over the entire surface.
- Dip the breaded cutlets in the beaten eggs, making sure the egg sticks well on all sides.
- Lastly, coat them in the breadcrumbs, pressing lightly to ensure the breading sticks well on both sides.
- Heat a generous amount of seed oil in a pan and when it has reached the right temperature (you can test it with a piece of bread; if the bread sizzles, the oil is ready), fry the cutlets until they are golden and crispy on both sides.
- Remove the cutlets from the oil and let them drain on kitchen paper to remove excess oil. Serve hot.
If you prefer lighter cooking, you can bake the cutlets in the oven on a baking tray lined with parchment paper at 200 °C (392 °F) for about 20 minutes, turning them halfway through cooking to brown on both sides.
