Carrot Bread Bites
17/11/2023Carrot bread bites are an excellent way to use up any carrots you might have at home, creating a soft and slightly sweet bread, perfect for a nutritious breakfast or snack. Here is the recipe:
Ingredients
- 300 g of carrots
- 500 g of wheat flour (type 0 or whole wheat for a more rustic variant)
- 250 ml of warm water
- 1 packet of dry brewer’s yeast (or 25 g of fresh brewer’s yeast)
- 1 tablespoon of sugar
- 1 teaspoon of salt
- 2 tablespoons of extra virgin olive oil
- 1 teaspoon of fennel seeds (optional for an aromatic note)
Preparation
- Start by peeling the carrots and grating them finely.
- In a large bowl, mix the brewer’s yeast with warm water and sugar to activate it. Let it rest for a few minutes.
- Add to the bowl the flour, salt, grated carrots, and a teaspoon of fennel seeds if you wish to add a special aroma.
- Knead all the ingredients until you get a homogenous dough and then work it on a floured surface for about 10 minutes. You should obtain a smooth and not too sticky dough. Add a little more flour if necessary.
- Form a ball with the dough, then place it in a bowl greased with extra virgin olive oil. Cover with a clean kitchen towel and let it rise for about 2 hours in a warm place, away from drafts.
- After the dough has risen, take it and with the help of a knife or a spatula, divide the dough into small bites, which you will proceed to shape into small spheres or shapes as you like.
- Spread the bites on a baking tray lined with parchment paper, cover them again, and let them rise for another 30 minutes.
- In the meantime, preheat the oven to 180 °C.
- Bake the bites for about 20-25 minutes or until golden brown.
- Once baked, let them cool on a wire rack before serving.

These carrot bread bites lend themselves to various interpretations: you can add chopped nuts or dried fruit for a crunchy touch, or enrich them with spices such as cinnamon or nutmeg for an even more inviting aroma. Moreover, you can use them as a base for delicious croutons, perfect to accompany aperitifs or as an appetizer.
