  • Breadcrumbs to taste
  • 1 carrot
  • 2 stalks of celery
  • 1 onion

Preparation

  1. Begin by soaking the stale bread in milk until it becomes soft.
  2. In a large bowl, combine the ground meat, eggs, grated Parmesan, squeezed bread, chopped parsley, crushed garlic clove, salt, and pepper. Mix all the ingredients well until you have a homogeneous mixture.
  3. Grease a loaf pan with extra virgin olive oil and sprinkle with breadcrumbs.
  4. Transfer the meat mixture into the pan, pressing well to adhere and create an even surface.
  5. Meanwhile, prepare the sofrito by finely chopping the carrot, celery, and onion and sautéing them in a pan with a drizzle of oil until they become soft and slightly golden.
  6. Add the tomato passata to the sofrito, salt, and cook for about 15-20 minutes to get a sauce.
  7. Cover the meatloaf with half of the prepared sauce and bake in a preheated oven at 180 °C for about 1 hour and 15 minutes. Halfway through cooking, uncover the meatloaf and let it brown on the surface.
  8. Remove the meatloaf from the oven and let it rest for a few minutes before unmolding.
