Bolognese lasagna is a dish that lends itself to many variations according to personal taste or local traditions. In some versions, for example, mozzarella is added to make it more stringy, or nutmeg is included in the béchamel to give an extra flavor. An interesting fact: lasagna is one of the few traditional dishes from the Emilia region that combines pasta and béchamel, both the result of a long evolution in the culinary history of the region.
