Blueberry Popsicles

Blueberry popsicles are a great choice for a refreshing and tempting break, especially in the hot months. Here is the recipe to make them at home:

Ingredients

  • 250 g of fresh or frozen blueberries
  • 60 ml of orange juice or another fruit juice of your choice
  • 2 tablespoons of honey or maple syrup (optional, to sweeten)
  • 120 ml of water (if necessary to adjust consistency)
  • Juice of 1/2 lemon (to balance acidity)

Preparation

  1. Start by washing the blueberries well if they are fresh. If you are using frozen blueberries, you can let them thaw slightly before using.
  2. Place the blueberries in a blender, adding the orange juice, honey or maple syrup, and lemon juice. Blend everything until you get a liquid and homogeneous mixture.
  3. If the mixture is too thick or you want to make it more fluid, add a little water until the desired consistency is reached. Taste to adjust sweetness, adding more honey or maple syrup if necessary.
  4. Take your popsicle molds and fill them with the blueberry mixture, leaving a little space at the top to allow for expansion during freezing.
  5. Insert the popsicle sticks into the mold.
  6. Put the molds in the freezer and let the popsicles freeze for at least 4 hours, or until they are completely solidified.
  7. To remove the popsicles from the molds, submerge the base of the mold for a few seconds in warm water and then gently pull the stick.

Fun Fact

Using honey, in addition to sweetening, will also help to make the consistency of the popsicles creamier and less hard due to its lower freezing point than water. Moreover, blueberries are known for their antioxidant properties, so in addition to being delicious, these popsicles can also be a small beneficial touch to your day.
