Blueberry Cake

Ingredients
- 250 g of fresh blueberries (you can also use frozen ones)
- 200 g of type 00 flour
- 150 g of granulated sugar
- 100 g of butter at room temperature
- 3 eggs
- 1 lemon (grated zest)
- 1 packet of baking powder
- A pinch of salt
- Icing sugar (optional, for decorating)
Preparation
- Preheat the oven to 180 °C (350 °F) and butter and flour a cake pan about 24 cm in diameter, or line it with parchment paper.
- In a bowl, cream the soft butter with the granulated sugar until you have a creamy and homogenous mixture.
- Add the eggs one at a time, mixing well after each addition.
- Mix in the grated lemon zest to add a citrus fragrance.
- In another bowl, mix the flour with the baking powder and a pinch of salt, then sift and gradually incorporate into the wet mixture, stirring gently to avoid lumps.
- Thoroughly wash the blueberries and dry them. If you’re using frozen ones, make sure to thaw and dry them well before use.
- Gently fold the blueberries into the batter, reserving some to decorate the top of the cake.
- Pour the mixture into the prepared pan and smooth the surface with a spatula.
- Decorate the top of the cake with the remaining blueberries.
- Bake for about 35-40 minutes, or until a skewer inserted in the center of the cake comes out clean.
- Once baked, remove the cake from the oven and let it cool before taking it out of the pan.
- Dust the cake with icing sugar before serving for a decorative and elegant touch.
