Blueberry Cake

Ingredients

  • 250 g of fresh blueberries (you can also use frozen ones)
  • 200 g of type 00 flour
  • 150 g of granulated sugar
  • 100 g of butter at room temperature
  • 3 eggs
  • 1 lemon (grated zest)
  • 1 packet of baking powder
  • A pinch of salt
  • Icing sugar (optional, for decorating)

Preparation

  1. Preheat the oven to 180 °C (350 °F) and butter and flour a cake pan about 24 cm in diameter, or line it with parchment paper.
  2. In a bowl, cream the soft butter with the granulated sugar until you have a creamy and homogenous mixture.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Mix in the grated lemon zest to add a citrus fragrance.
  5. In another bowl, mix the flour with the baking powder and a pinch of salt, then sift and gradually incorporate into the wet mixture, stirring gently to avoid lumps.
  6. Thoroughly wash the blueberries and dry them. If you’re using frozen ones, make sure to thaw and dry them well before use.
  7. Gently fold the blueberries into the batter, reserving some to decorate the top of the cake.
  8. Pour the mixture into the prepared pan and smooth the surface with a spatula.
  9. Decorate the top of the cake with the remaining blueberries.
  10. Bake for about 35-40 minutes, or until a skewer inserted in the center of the cake comes out clean.
  11. Once baked, remove the cake from the oven and let it cool before taking it out of the pan.
  12. Dust the cake with icing sugar before serving for a decorative and elegant touch.
