Blueberry Cookies

Ingredients

  • 250 g of all-purpose flour
  • 125 g of sugar
  • 100 g of butter at room temperature
  • 1 egg
  • A pinch of salt
  • 1/2 teaspoon of baking powder
  • 1 sachet of vanillin or natural vanilla extract
  • 150 g of fresh or frozen blueberries
  • Powdered sugar for decorating (optional)

Preparation

  1. In a large bowl, mix the flour with sugar, a pinch of salt, baking powder, and vanillin.
  2. Add the butter, cut into pieces, and work the mixture with your fingertips until it reaches a sandy consistency.
  3. Make a well in the center and add the egg. Work the ingredients until you have a homogeneous dough.
  4. Gently fold the blueberries into the dough, trying to keep the fruit as whole as possible.
  5. Take small portions of dough and form small balls, place them on a baking sheet lined with parchment paper, and slightly flatten them.
  6. Preheat the oven to 180 °C and bake the cookies for about 15-20 minutes or until they are lightly golden.
  7. Let them cool completely before dusting with powdered sugar if desired.
