Blueberry and Pistachio Porridge

Porridge is a traditionally British dish, usually made with oats and milk or water, and in this case, we will enrich it with the sweetness of blueberries and the crunchy touch of pistachios. Here is how to prepare a delicious blueberry and pistachio porridge:

Ingredients

  • 50 g of oat flakes
  • 250 ml of milk (can be cow’s or a plant-based alternative such as almond, soy, etc., depending on preferences)
  • A pinch of salt
  • 1 tablespoon of honey or maple syrup (optional)
  • 50 g of fresh or frozen blueberries
  • 25 g of unsalted, shelled, and coarsely chopped pistachios
  • A bit of brown sugar or other sweetener of choice (optional)

Preparation

  1. In a small pot, pour the oat flakes, milk, and pinch of salt. If you want a sweet porridge, you can also add honey or maple syrup at this point.
  2. Turn the heat to medium and slowly bring to a boil, stirring occasionally.
  3. Once the porridge begins to boil, reduce the heat and let it cook for about 5 minutes, or until it reaches the desired consistency, stirring frequently to prevent sticking to the bottom of the pot.
  4. In the meantime, if you are using fresh blueberries, wash them under running water. If they are frozen, you can defrost them a bit beforehand or use them directly.
  5. Remove the porridge from the heat and let it rest for a minute to thicken further.
  6. Serve the porridge in a bowl and garnish with the blueberries and chopped pistachios. If you wish, you can add a touch of brown sugar or another sweetener of your choice.
