Blueberry and chocolate tart
17/11/2023Here’s a recipe for a delicious blueberry and chocolate tart:
Ingredients
- 300 g of all-purpose flour
- 150 g of cold butter, cubed
- 130 g of icing sugar
- 1 large egg
- 1 egg yolk
- A pinch of salt
- Grated zest of 1 lemon (optional)
For the filling:
- 200 g of dark chocolate
- 300 g of fresh or frozen blueberries
- 1 tablespoon of sugar (according to the sweetness of the blueberries and personal preference)
- Juice of 1/2 lemon
For the chocolate ganache (optional):
- 100 ml of whipping cream
- 100 g of dark chocolate
Preparation
- Prepare the shortcrust pastry: in a bowl, mix the flour and the butter with your fingertips until the mixture becomes crumbly. Add the icing sugar, egg, egg yolk, salt, and lemon zest, then quickly work to form a ball of dough.
- Wrap the pastry ball in cling film and let it rest in the refrigerator for at least 30 minutes.
- Roll out the pastry on a lightly floured surface into an even layer and line a pre-buttered and floured tart tin.
- Prick it with the tines of a fork to prevent it from puffing up during baking and line the base of the tart with parchment paper and pie weights or dry beans to blind bake.
- Preheat the oven to 180 °C and bake the tart base for about 15 minutes, then remove the weights and paper and allow to brown for another 5-10 minutes. Let cool.
- Melt 200 g of dark chocolate in a double boiler or microwave and spread an even layer on the bottom of the cooled tart.
- In a pan, heat the blueberries with a tablespoon of sugar and lemon juice for a few minutes, until they become slightly soft and release their juice. Let cool.
- Spread the blueberries over the layer of chocolate on the tart.
- To make the ganache (optional), heat the cream without boiling it and pour in the chopped dark chocolate, stir until smooth, and pour over the tart as a decoration.
- Put the tart in the refrigerator until the ganache has set before serving.
Curiosity
The tart is a very versatile dessert and suitable for all seasons. In this version, the combination of blueberries and chocolate creates a very pleasant sweet-bitter flavor profile. For a more rustic note, you can also add a sprinkle of toasted hazelnut chunks on the ganache before it sets.
