Blackberry Cake

Blackberry cake is a delightful dessert you can prepare when you have these delicious berries at your disposal. Here is a recipe with an Italian twist:

Ingredients

  • 250 g of fresh blackberries
  • 200 g of all-purpose flour
  • 150 g of granulated sugar
  • 100 g of melted butter
  • 3 eggs
  • 1 packet of baking powder
  • Grated zest of 1 lemon
  • A pinch of salt
  • Powdered sugar (for decoration)

Preparation

  1. Preheat the oven to 180 °C.
  2. Butter and flour a cake pan, or line it with parchment paper.
  3. In a bowl, beat the eggs with the sugar until the mixture is frothy and light in color.
  4. Slowly add the melted butter, continuing to stir.
  5. Gently fold in the sifted flour with the baking powder, lemon zest, and a pinch of salt, mixing with a bottom-up motion to not deflate the mixture.
  6. Pour half of the batter into the prepared pan, arrange a layer of blackberries on top, and then cover with the remaining batter.
  7. Bake for about 35-40 minutes or until a toothpick inserted into the center of the cake comes out clean.
  8. Let the cake cool in the pan, then unmold it and dust it with powdered sugar before serving.

Curiosity

Blackberries are fruits rich in antioxidants and were once also foraged in the wild, but today they are easily found cultivated as well. Blackberry cake is a great way to celebrate the end of summer and the beginning of autumn, when these fruits are at their peak in many regions of Italy, especially in the center and the north.

Remember to wash the blackberries well before using them, and if you wish, you can also add a sprinkle of cinnamon to the batter to give it an even warmer and more enveloping aroma.
