Blackberry and Yogurt Cake

The blackberry and yogurt cake is a simple and delicious dessert that combines the sweetness of blackberries with the freshness of yogurt. Here is the recipe:

Ingredients

  • 250 g of all-purpose flour
  • 200 g of sugar
  • 2 eggs
  • 125 g of white yogurt (better if Greek for a creamier consistency)
  • 100 g of melted butter
  • 300 g of blackberries
  • 1 packet of baking powder
  • Grated zest of 1 lemon
  • A pinch of salt

If you want to make the cake more Italian, you can replace some of the sugar with brown sugar for a slightly more caramelized and rustic taste.

Preparation

  1. Preheat the oven to 180 °C.
  2. In a bowl, beat the eggs with the sugar until the mixture is light and fluffy.
  3. Add the yogurt and melted butter, continuing to mix.
  4. Gradually incorporate the sifted flour with the baking powder and lemon zest. Add a pinch of salt.
  5. Blend everything until you get a homogeneous mixture.
  6. Butter and flour a cake pan and pour the mixture into it.
  7. Arrange the blackberries on the surface of the mixture, pressing them slightly so that they sink in a bit.
  8. Bake the cake for about 40-45 minutes. Check the doneness by inserting a toothpick in the center of the cake: it should come out clean.
  9. Let the cake cool before removing it from the pan.

If you like, you can dust the cake with powdered sugar before serving it for a more refined look and a slight addition of sweetness.
