Venere Rice with Shrimp and Zucchini

Venere Rice with Shrimp and Zucchini is an elegant and exotic dish, perfect for a special dinner. Here is the recipe with an Italian twist.

Ingredients

  • 200 g of Venere Rice
  • 200 g of peeled shrimp
  • 2 medium zucchini
  • 1 clove of garlic
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Chopped parsley (optional)
  • Grated lemon zest (optional)
  • White wine (one glass)

Preparation

  1. Begin by cooking the Venere Rice in plenty of salted water following the instructions on the package, usually between 18 and 20 minutes depending on the brand. Venere Rice takes longer to cook than other types of rice.

  2. Meanwhile, wash and cut the zucchini into cubes or slices, as you prefer.

  3. In a large pan, heat a drizzle of extra virgin olive oil and add a crushed garlic clove to flavor the oil. Once the garlic turns golden, remove it.

  4. Add the zucchini cubes to the pan and sauté over high heat until golden brown. Adjust the seasoning with salt and pepper.

  5. Once the zucchini is almost done, add the shrimp and toss everything together for a few minutes. If you wish, deglaze with a glass of white wine and let the alcohol evaporate.

  6. When the Venere Rice is cooked, drain it and add it to the pan with the zucchini and shrimp, gently mixing to combine the flavors.

  7. If desired, you can add some chopped parsley and grated lemon zest to bring a touch of freshness to the dish.

  8. Serve hot, with a further drizzle of raw extra virgin olive oil if you like.
