Black Forest Tiramisu

Ingredients

  • 500 g of mascarpone
  • 5 fresh eggs (with yolks and whites separated)

Preparation

  1. First, prepare the mascarpone cream. Whip the yolks with the sugar until you obtain a light and fluffy mixture. Add the mascarpone and mix gently until you achieve a smooth and homogeneous consistency.
  2. In another bowl, whip the egg whites until stiff peaks form and then gently fold them into the mascarpone mixture to obtain a soft and airy cream.
  3. Dip the ladyfingers in the cherry juice or kirsch, being careful not to soak them too much.
  4. Arrange a layer of ladyfingers on the bottom of a baking dish.
  5. Add a layer of mascarpone cream and distribute half of the pitted cherries.
  6. Create a second layer with the dipped ladyfingers and cover with the remaining mascarpone cream.
  7. Decorate the surface with the remaining cherries and finish with a dusting of unsweetened cocoa powder and dark chocolate shavings.
  8. Melt the bar of dark chocolate in a double boiler and use the melted chocolate to create decorative strands on the surface of the tiramisu.
  9. Let the tiramisu rest in the fridge for at least 3-4 hours before serving.
