Black Cake with Pears and Rice Flour

Ingredients

  • 3 ripe but firm pears
  • 200 g of dark chocolate
  • 100 g of butter
  • 3 eggs
  • 150 g of sugar
  • 120 g of rice flour
  • 1 packet of baking powder for desserts (about 16 g)
  • a pinch of salt

Preparation

  1. Preheat the oven to 180 °C.
  2. Peel the pears, remove the core, and cut them into pieces.
  3. Melt the chocolate in a double boiler along with the butter.
  4. In a bowl, beat the eggs with the sugar until you have a light and fluffy mixture.
  5. Add the melted chocolate to the egg mixture and blend well.
  6. Fold in the sifted rice flour, a pinch of salt, and the baking powder, mixing gently to not deflate the mixture.
  7. Add the chopped pears and gently mix to distribute them evenly.
  8. Pour the batter into a buttered and floured cake pan (or lined with parchment paper) and level the surface with a spatula.
  9. Bake for about 40-45 minutes or until a toothpick inserted into the center of the cake comes out clean.
  10. Remove the cake from the oven and let it cool before unmolding it.
