Ingredients
- 3 ripe but firm pears
- 200 g of dark chocolate
- 100 g of butter
- 3 eggs
- 150 g of sugar
- 120 g of rice flour
- 1 packet of baking powder for desserts (about 16 g)
- a pinch of salt
Preparation
- Preheat the oven to 180 °C.
- Peel the pears, remove the core, and cut them into pieces.
- Melt the chocolate in a double boiler along with the butter.
- In a bowl, beat the eggs with the sugar until you have a light and fluffy mixture.
- Add the melted chocolate to the egg mixture and blend well.
- Fold in the sifted rice flour, a pinch of salt, and the baking powder, mixing gently to not deflate the mixture.
- Add the chopped pears and gently mix to distribute them evenly.
- Pour the batter into a buttered and floured cake pan (or lined with parchment paper) and level the surface with a spatula.
- Bake for about 40-45 minutes or until a toothpick inserted into the center of the cake comes out clean.
- Remove the cake from the oven and let it cool before unmolding it.
