Black and White Swirl Cookies

Ingredients

For the vanilla dough:

  • 200 grams of flour
  • 100 grams of soft butter
  • 100 grams of sugar
  • 1 egg
  • 1/2 teaspoon of vanilla extract
  • A pinch of salt

For the cocoa dough:

  • 180 grams of flour
  • 20 grams of cocoa powder
  • 100 grams of soft butter
  • 100 grams of sugar
  • 1 egg
  • A pinch of salt

Preparation

  1. For the vanilla dough:

    • Cream the butter with sugar until smooth.
    • Add the egg and vanilla extract, then mix.
    • Incorporate the sifted flour and salt, then knead the dough until it forms a ball. Wrap it in cling film and let it rest in the refrigerator for about 30 minutes.
  2. For the cocoa dough:

    • Repeat the process for the vanilla dough, substituting part of the flour with cocoa powder.
    • Again, form a ball and let it rest in the refrigerator wrapped in film.
  3. To form the swirl cookies:

    • Roll out the two dough balls (vanilla and cocoa) separately on two sheets of parchment paper, forming two rectangles of the same size and about 5mm thick.
    • Gently place one sheet on top of the other and lightly press to adhere them together.
    • Carefully roll up the resulting rectangle, starting from one of the longer sides, to form a cylinder.
    • Wrap the cylinder in cling film and let it cool in the refrigerator for at least an hour.
  4. Baking:

    • Preheat the oven to 180 °C.
    • Remove the cling film and cut the cylinder into slices about 5mm thick.
    • Place the cookies on a baking sheet lined with parchment paper, keeping them spaced apart.
    • Bake in the preheated oven for about 10-12 minutes or until the edges just begin to brown.
    • Let the cookies cool on a wire rack before serving.
