Jam Biscuit Tart
17/11/2023The jam biscuit tart is a classic and extremely versatile dessert, perfect for breakfast or a snack. Here is how to prepare it:
Ingredients
- 250 grams of all-purpose flour
- 100 grams of sugar
- 125 grams of cold butter, cut into pieces
- 1 large egg
- 1 egg yolk (for brushing)
- Grated zest of 1 untreated lemon
- 1 pinch of salt
- 1/2 teaspoon of baking powder
- About 300 grams of jam of your choice (traditionally apricot or strawberry)
Preparation
- In a large bowl, mix the flour with the sugar, baking powder, and a pinch of salt.
- Add the cold butter, cut into pieces, and quickly work the ingredients, preferably with a fork or a mixer, until you get a sandy mixture.
- Add the egg and the lemon zest, then knead until you have a homogeneous dough. Do not overwork the dough to prevent it from becoming elastic.
- Wrap the dough in cling film and let it rest in the fridge for about 30 minutes.
- Pre-heat the oven to 180 °C.
- Roll out three-quarters of the dough to about 5mm thick and line a previously buttered and floured tart pan with it.
- Prick the bottom of the tart with the tines of a fork, then spread the jam on top, leaving a free edge of about 1 cm.
- With the remaining dough, create strips or shapes to decorate the surface of the tart.
- Brush the dough strips with a little beaten egg yolk to add shine.
- Bake for about 25-30 minutes or until the tart is golden brown.
- Let it cool before serving.
The jam biscuit tart is one of the many variations of the tart theme. You can customize the filling with the jam you prefer or replace part of the flour with almond flour for an even richer taste.
