Cookie Cake

The cookie cake is a classic no-bake dessert loved by both adults and children. Its preparation is quite simple and can be a fun activity to do with kids as well. Here’s what you need and how to make it:

Ingredients

  • 500 g of dry biscuits (like Oro Saiwa or similar)
  • 150 g of butter
  • 500 ml of milk
  • 150 g of sugar
  • 2 eggs
  • 1 vanilla pod (or vanilla essence)
  • Unsweetened cocoa powder (to taste)
  • Coffee (as needed to soak the biscuits)
  • Liqueur (like Alchermes or rum, optional)

Preparation

  1. Start making the custard by whisking the eggs with the sugar until you have a light and fluffy mixture.
  2. Melt the butter in a double boiler or in the microwave and let it cool down.
  3. If you’re using a vanilla pod, split it open and scrape out the seeds inside. Add the seeds (or vanilla essence) to the egg and sugar mixture.
  4. Heat the milk until it’s almost boiling and gradually add it to the egg and sugar mixture, stirring continuously.
  5. Put the mixture back on a low heat, continuing to stir until the cream thickens. Be careful not to let it boil.
  6. Allow the cream to cool, stirring occasionally to prevent a skin from forming on the surface.
  7. Prepare the coffee and let it cool down; if you wish, you can add some liqueur to the coffee for an extra flavor.
  8. Begin assembling the cake by quickly dipping biscuits into the coffee and laying them out in a dish or on a serving plate.
  9. Spread a layer of custard on the biscuits, then continue to alternate layers of soaked biscuits and custard until all ingredients are used up.
  10. Finish with a layer of custard and sprinkle unsweetened cocoa powder over the top.
  11. Allow to rest in the refrigerator for at least a couple of hours before serving, even better if left overnight.

The cookie cake is a very versatile recipe that can be personalized by adding elements such as chocolate chips, coconut flakes, dried fruit, or pieces of fresh fruit between the layers.
