Ciambellone

The ciambellone is a classic and comforting cake, great for breakfast or a snack. Here is a basic recipe that you can follow, and I will also indicate some Italian touches to make it even more special.

Ingredients

  • 300g of flour
  • 200g of sugar
  • 100ml of seed oil
  • 100ml of milk
  • 3 eggs
  • 1 packet of baking powder
  • Grated zest of 1 lemon or 1 orange
  • A pinch of salt

Preparation

  1. Preheat the oven to 180 °C.
  2. In a large bowl, beat the eggs with the sugar until it is frothy and light.
  3. Add the seed oil slowly, continuing to beat.
  4. Incorporate the sifted flour a little at a time alternating with the milk, to avoid lumps.
  5. Add the grated zest of the lemon or orange and a pinch of salt.
  6. Finally, fold in the sifted baking powder and gently mix the batter.
  7. Pour the batter into a previously buttered and floured bundt pan.
  8. Bake for about 40 minutes or until a skewer inserted in the center comes out clean.
  9. Let it cool before unmolding and serving.

For an Italian touch, you can use extra virgin olive oil instead of seed oil and add a tablespoon of anise or limoncello liquor to enhance the aroma. Furthermore, you might decorate the ciambellone with glaze made of powdered sugar and lemon or orange juice for an even more intense flavor and impeccable presentation.
