Bicolor Log

The bicolor log is an elegant and delicious dessert that can make a stunning impression on the table for any occasion. Here is the recipe to prepare a bicolor log:

Ingredients

  • 4 eggs
  • 120 g of sugar
  • 100 g of 00 flour
  • 20 g of unsweetened cocoa powder
  • A pinch of salt
  • 250 ml of whipping cream
  • 100 g of dark chocolate
  • Icing sugar (for dusting)
  • Rum or vanilla flavouring (optional, for flavouring)

Preparation

  1. First of all, turn on the oven and preheat it to 180 °C.
  2. Take the eggs and separate the yolks from the whites. Whisk the egg whites until stiff with a pinch of salt.
  3. In another bowl, beat the yolks with sugar until you have a light and fluffy mixture.
  4. Add the sifted flour to the yolks, mixing gently to not deflate the mixture.
  5. Fold in a third of the beaten egg whites into the mixture of yolks, flour, and sugar, mixing slowly from the bottom to the top. Add the rest of the egg whites using the same method to not deflate the batter.
  6. Take some of this batter and mix it with the sifted cocoa to obtain a uniform color without lumps.
  7. Line a baking tray with parchment paper and pour the white batter, leveling it well.
  8. Add the cocoa batter, forming stripes or designs at will, to create the bicolor effect.
  9. Bake in the oven for about 10-12 minutes.
  10. Meanwhile, melt the chocolate in a double boiler or in the microwave and whip the cream, adding a bit of icing sugar if you like it sweet.
  11. Once the batter is cooked, remove it from the oven and flip it onto another sheet of parchment paper. Remove the parchment paper used for baking and roll the biscuit on itself, using the new paper. Let it cool.
  12. When it’s cold, carefully unroll and spread a layer of whipped cream mixed with melted chocolate. If you wish, you can flavour the cream with rum or vanilla.
  13. Roll the biscuit up again with the filling inside, wrap it in cling film and let it rest in the fridge for at least an hour.
  14. Once rested, dust with icing sugar before serving.

Curiosity

The bicolor log is a variation of the classic Christmas log but can be customized with different types of fillings and decorations. The play of colors makes it particularly attractive and you can decorate it with dollops of cream, chocolate shavings, or even small sugar or marzipan decorations to make each slice unique and inviting.
