Berry Flan with Chocolate Sauce
17/11/2023Here’s how to prepare a delicious berry flan with chocolate sauce, a tasty and colorful variation of the classic flan.
Ingredients
- 450 ml of milk
- 200 ml of fresh cream
- 100 g of sugar
- 4 whole eggs
- 150 g of mixed berries (such as blueberries, raspberries, and currants)
- 1 vanilla pod (or 1 teaspoon of vanilla extract)
- Butter as needed for greasing ramekins
For the chocolate sauce:
- 100 g of high-quality dark chocolate
- 50 ml of fresh cream
- A knob of butter
Preparation
- Preheat the oven to 160 °C and grease the flan ramekins with some butter.
- In a small pot, heat the milk with the cream and vanilla seeds (or extract) until it is almost boiling, then remove from heat.
- In a bowl, whisk the eggs with the sugar until the mixture is frothy and light.
- Slowly add the hot milk to the egg and sugar mixture, continuously stirring to prevent the eggs from cooking.
- Place the berries at the bottom of the ramekins, then pour over the egg and milk mixture.
- Place the ramekins in a baking dish and pour hot water into the dish to reach about halfway up the sides of the ramekins, to cook them in a bain-marie.
- Bake in the preheated oven for about 40-45 minutes or until the flan is set but still slightly wobbly in the center.
- Remove from the oven and let cool to room temperature, then refrigerate for at least one hour before unmolding.
For the chocolate sauce:
- Break the chocolate into pieces and place it in a heatproof bowl.
- In a small pot, bring the fresh cream almost to a boil and pour it over the chocolate.
- Let it rest for a couple of minutes, then add a knob of butter and stir until the sauce is smooth and homogeneous.
To serve, gently invert the flans onto plates, accompany with the chocolate sauce and, if desired, garnish with more fresh berries.
Trivia
The flan is a spoon dessert of ancient Roman origin, but it’s also very popular in Spain and Latin America. The version with berries adds a fresh and slightly tangy touch that pairs perfectly with the creaminess of the flan and the intense flavor of the chocolate sauce.
