Berry Semifreddo

Berry Semifreddo is a fresh and delicate dessert, ideal as a dessert after a meal or for a delicious snack. Here’s how to prepare it:

Ingredients

  • 300 g of mixed berries (raspberries, blueberries, red currants, wild strawberries)
  • 4 egg yolks
  • 100 g of sugar
  • 250 ml of fresh cream to whip
  • 100 ml of milk
  • 1 sachet of vanilla sugar or the seeds of a vanilla pod
  • 2 sheets of gelatin (about 12 g)

Preparation

  1. Start by soaking the gelatin sheets in cold water for about 10 minutes to soften them.
  2. In the meantime, wash and clean the berries, setting some aside for the final decoration.
  3. Pour the egg yolks and sugar into a large bowl and whip them with an electric mixer or by hand until you get a frothy and light mixture.
  4. Heat the milk with the vanilla sugar or vanilla pod until it is almost boiling.
  5. Slowly pour the hot milk onto the whipped yolks, continuing to stir to blend everything together.
  6. Transfer the mixture into a double boiler and cook, stirring continuously until it reaches the consistency of a custard that coats the back of a spoon (be careful not to boil it to prevent the yolks from curdling too much).
  7. Squeeze the soaked gelatin and dissolve it in the hot custard, stirring until fully absorbed.
  8. Let the cream cool to room temperature, stirring occasionally.
  9. Whip the fresh cream in a separate bowl until it is very firm.
  10. Gently incorporate the whipped cream into the now-cold custard, adding the berries as well (if you want a marbled effect, do not mix too much).
  11. Pour the mixture into a loaf pan lined with cling film or into individual cups.
  12. Place in the freezer for at least 4-6 hours until it is well solidified.
  13. When ready to serve, take the semifreddo out of the freezer and let it soften for a few minutes, then invert it onto a serving plate and decorate with the berries set aside.
