Beetroot Croquettes

Beetroot croquettes are a tasty and colorful vegetarian dish, perfect as an appetizer or side dish. Here’s how to prepare them:

Ingredients

  • 400 g of pre-cooked beetroots
  • 100 g of soft goat cheese
  • 1 egg
  • 50 g of grated Parmesan cheese
  • 80 g of breadcrumbs
  • Salt and pepper to taste
  • Chopped parsley (optional)
  • Vegetable oil for frying

Preparation

  1. Start by grating the pre-cooked beetroots with a large-hole grater into a large bowl.
  2. Add the goat cheese and mix well to incorporate it with the beetroot.
  3. Stir in the egg, grated Parmesan cheese, chopped parsley (if using), salt, and pepper. Mix everything until you have a homogeneous mixture.
  4. Gradually add breadcrumbs, just enough to obtain a mixture that can be worked with the hands, but is still quite moist.
  5. With your hands, shape the croquettes into the desired size, then roll them in the remaining breadcrumbs to cover them evenly.
  6. In a pan, heat plenty of vegetable oil and, once hot, fry the croquettes until they are golden brown and crispy.
  7. Drain them on paper towels to remove the excess oil.
  8. Serve the croquettes warm as an appetizer or side dish.

Curiosity

Beetroots are extremely versatile and packed with nutrients, including fiber, vitamins, and minerals. Moreover, their intense color can visually enrich any dish. For a lighter variant, you can bake these croquettes in an oven on a baking sheet lined with parchment paper until they are crispy, turning them halfway through the cooking time to ensure they brown evenly.
