Sandwich with Beetroot and Spiced Chicken

Ingredients

1 chicken breast
1 whole wheat sandwich bun or ciabatta

Arugula or mixed salad greens
1 tablespoon of Greek yogurt or mayonnaise
Optional: slices of cheese such as cheddar or mozzarella

Preparation

Start by slicing the chicken breast into slices or strips. In a bowl, season the chicken with a mix of spices of your choice (paprika, cumin, coriander, pepper, salt) and a drizzle of olive oil. Mix well so that the chicken is completely coated with the spices.
Heat a non-stick frying pan and cook the spiced chicken over medium-high heat, turning occasionally, until it is well-browned and properly cooked.
While the chicken is cooking, cut the cooked beetroot into thin slices.
If you wish, you can lightly toast the bun on a grill or in the oven to make it crispier.
Spread the Greek yogurt or mayonnaise on both halves of the bun. This will add moisture and create a flavor base.
On the bottom half of the bun, arrange a bed of arugula or salad greens of your choice.
